Pork in Spiced Sweet Soy sause

Babi Ketjap is a variation of Indonesian braised pork.  It’s simplicity has made it a favourite with lovers of Asian cuisine.  What it lacks in good looks it makes up in flavour.

Babi Ketjap is also popular in the Netherlands due to the historic connection with Indonesia.

Babi means pork in Indonesian.  Ketjap refers to the sauce which is mostly made up of Ketjap Manis – Sweet Indonesian Soy sauce.

This is a very simple meal to make with minimal effort that is bursting with flavour.  The use of our Ketjap Manis and some common spices that you would find in any kitchen will produce a delicious exotic meal.

For those who are vegetarian or vegan, we experimented with this recipe replacing the babi with soy chunks to produce a meal free of animal products and just as delicious.

 

Recipe

Ingredients:

300g pork.

Olive (or other) oil for frying

1tsp powdered ginger

1tsp powdered garlic

200ml Ketjap Manis

1 tbsp cinnamon powder

1 tbsp black pepper (you can reduce this if your taste for pepper is less than ours)

1 small onion

 

Method:

In a wok, fry the pork in a generous amount of olive oil until browned.

Dice the onion and fry with the pork.

Add ginger and garlic and fry again for a minute.

Add the Ketjap Manis, cinnamon and pepper

Allow to reduce into a sauce.  Add some water if necessary to achieve the desired consistency.

For the soy chunks option, soak the soy chunks in boiling water for 30 minutes.  Drain and add to the wok with the onions.  The rest is the same.
