KETJAP MANIS SPICED RIBS RECIPE (serves 2-3)
INGREDIENTS
- 1kg pork rib, cleaned
- 4 medium cloves garlic, crushed
- 1 tablespoon fresh ginger, grated
- ½ cup Indomex Ketjap Manis
- ¼ cup soy sauce
- 2 tablespoons Indomex Sesame Oil
- 1 teaspoon Indomex Chinese 5-spice powder
- 1 cayenne or birds eye chilli, finely diced (optional)
- ½ cup water
To Serve
Crunchy home-made Vegetable Pickle or Asian Slaw
METHOD
- Mix all the marinade ingredients together in a bowl and pour over the pork ribs ensuring meat is well coated
- Refrigerate for a minimum of 4-hours (preferably overnight)
- Pre-heat oven to 170 degrees Celsius
- Place pork ribs coated in marinade into a roasting pan and cover loosely with baking paper
- Pop into oven for 60 minutes, turning every 15-20 minutes to baste ribs
- Remove from oven and allow to cool slightly in marinade (should now be nice and sticky with ribs cooked through and tender but still pale) (don’t overcook)
- Now for the smoky flavour that we all love – finish off the ribs over a coal or wood fire (a braai as it is known in SA), basting and turning ribs to ensure evenly browned, slightly crispy and nice and sticky
- Remove from the fire and enjoy
