Made with a fragrant red curry spice paste, lemongrass powder, coconut milk, and roasted peanuts, this Thai-style bowl of yumminess delivers layers of flavour in every bite.
What makes Panang curry especially perfect for cooler weather is its richness – the creamy coconut & peanut base brings warmth and comfort, while the chilli kick adds just enough spice to chase away the “brrrr” of winter evenings. Served over steaming jasmine rice or silky egg noodles, it’s the kind of meal that instantly turns dinner into a cosy hug.

Indomex Panang-style Chicken Curry
Ingredients
- 2 tbsp Indomex red curry paste
- 400ml coconut milk
- 500g chicken breast, cut into slithers
- 1-2 tbsp smooth peanut butter (replace with 1-2 tbsp Indomex Sate Sauce for added flavour)
- 1 tsp Indomex Lemongrass Powder (or 1 fresh Lemongrass root, bashed to release flavour)
- 1 tbsp fish sauce
- 1 tsp palm sugar (or brown sugar)
- 1 red pepper, sliced
- Fresh basil leaves (Thai basil if you can find it)
- Chopped peanuts and chilli for garnish
- Steamed Indomex jasmine rice or silky Indomex egg noodles, to serve
Method
- Heat a pan over medium heat and fry the Indomex red curry paste for 1–2 minutes until fragrant.
- Add coconut milk, peanut butter & Indomex lemongrass powder, stirring until smooth and creamy.
- Add the chicken and simmer for 10–15 minutes until cooked through.
- Stir in fish sauce & sugar to balance the flavours.
- Add sliced red peppers and simmer for another 2-3 minutes.
- Serve hot with Indomex jasmine rice (or noodles), fresh basil, chopped peanuts, and diced chilli
