INDOMEX HARISSA CHICKEN 🔥
(serves 3–4):
INGREDIENTS
- 4 chicken breasts, cut into strips
- 2–3 tbsp Indomex Harissa Paste
- ½ onion, sliced (red or white)
- ½ red pepper, julienned
- ½ cup plain yoghurt
- 1 tbsp olive oil
- Salt to taste
- Optional: 1 can chickpeas (to bulk up)
To serve:
- bulgur, couscous or brown rice
- Fresh coriander & chilli (optional garnish 🌶️)
METHOD
- Heat olive oil in a pan and sauté onion until translucent.
- Add red pepper and chicken strips, frying until the chicken is lightly golden but not fully cooked.
- Stir in the Indomex Harissa Paste and coat the chicken well, frying for ±2 minutes to build flavour.
- Lower the heat, add the yoghurt and let it simmer gently for about 10 minutes, or until the chicken is cooked through and tender. Add chickpeas here if using.
- Season to taste.
- Serve over bulgur, couscous or rice, and finish with fresh coriander and a touch of chilli for heat.
