INDOMEX HARISSA CHICKEN 🔥

(serves 3–4):

INGREDIENTS

  • 4 chicken breasts, cut into strips
  • 2–3 tbsp Indomex Harissa Paste
  • ½ onion, sliced (red or white)
  • ½ red pepper, julienned
  • ½ cup plain yoghurt
  • 1 tbsp olive oil
  • Salt to taste
  • Optional: 1 can chickpeas (to bulk up)

To serve:

  • bulgur, couscous or brown rice
  • Fresh coriander & chilli (optional garnish 🌶️)

METHOD

  • Heat olive oil in a pan and sauté onion until translucent.
  • Add red pepper and chicken strips, frying until the chicken is lightly golden but not fully cooked.
  • Stir in the Indomex Harissa Paste and coat the chicken well, frying for ±2 minutes to build flavour.
  • Lower the heat, add the yoghurt and let it simmer gently for about 10 minutes, or until the chicken is cooked through and tender. Add chickpeas here if using.
  • Season to taste.
  • Serve over bulgur, couscous or rice, and finish with fresh coriander and a touch of chilli for heat.
