INDOMEX CHILLI CRISP RAMEN NOODLE
Serves 2-4
INGREDIENTS
- 2 cakes Ramen Noodles
- 2 tablespoons coconut oil or Indomex peanut oil
- 1 small onion, sliced into “petals”
- 1 clove garlic, crushed
- Thumb size fresh garlic, finely diced
- 1/3 cup Indomex Tahini or Indomex Sate Sauce
- 2 tablespoons Indomex Ketjap Manis
- 1-2 tablespoons of Indomex Chill Crisp (or to taste)
- ¼ cup chopped cashew nuts
- Fish Sauce or salt to taste
- 3 spring onions, chopped
- ½ cup coriander chopped
INSTRUCTIONS
- Cook Ramen according to packet instructions and set aside keeping ½ cup of noodle water for sauce
- Mix the Tahini and Ketjap Manis, adding a little of the noodle water if necessary
- Add oil to wok and lightly saute onions, garlic and ginger
- Add Noodles and toss through
- Add Tahni & Ketjap Manis Mix and toss through until warm – add a little more noodle water if paste is too thick – you are aiming for a glossy sauce
- Add Cashew Nuts, Spring Onions and Chilli Crisp
- Remove from heat and season to taste with Fish Sauce or salt
- Top with chopped coriander & Enjoy !!!!
** Note: no need to pre-cook the noodles – I like to pop my ramen into a container and cover with boiling water and a tight lid and then just leave it until I am ready – about 15 minutes
** Note: this is not a saucy noodle dish. Sauce should be just enough to coat noodles allowing the chilli crisp to shine
