I am a little obsessed with Gochujang! There is always spicy Kimchi hiding in my fridge in a tightly closed bottle (my family simply don’t appreciate to “sweaty sock” aroma of this little jar of funky goodness) and I sneak a tablespoon of this spicy-sweet deeply delicious paste into sauces, marinades and soups whenever I can.
But why Gochujang? I have always been intrigued by Asian flavours, but only recently discovered Korean cuisine thanks to my nephew who spent a few years teaching English in Korea – there is nothing better than crispy KFC (that’s Korean Fried Chicken) dipped in “Bang Bang” Sauce, or a bowl of Bibimbap topped with vinegary sweet & sour pickles and a fried egg; but there is one dish that dreams are made of – Tteokbokki! Spicy, sweet, garlicky, slightly smoky but definitely funky flavours combined with chewy rice cakes – Street Food flavour at its best and very moreish!
While delicious and traditional, the glutinous rice cakes used in Tteokbokki are not always easy to find without a Korean market around the corner. Luckily, store-bought gnocchi makes for a great substitute and this Creamy Korean Gnocchi ticks all the boxes.

Creamy Korean Gnocchi
serves 2-4
Ingredients
- 500g gnocchi
- ½ cup bacon, cut into thin strips
- 2 minced garlic cloves
- 1 heaped tablespoon gochujang paste
- ½ cup Chinese Shaoxing wine (or dry Sherry)
- 1 cup sour cream
- Small bag baby spinach (about 2 cups)
- ¼ cup finely grated parmesan
- 2 tbsp extra virgin olive oil
Method
- Bring a pot of salted water to the boil
- Add the gnocchi and cook, stirring occasionally, until they rise to the surface then drain
- Pan fry the bacon until slightly crispy
- Add in the garlic and gochujang and stir until everything is combined
- Deglaze the pan by adding the Chinese Shaoxing wine or Sherry – add the sour cream & stir.
- Toss the cooked gnocchi in the sauce
- Add the baby spinach and Parmesan and stir until combined
- Drizzle with extra virgin olive oil, and serve
Don’t have Gochujang Paste? Replace with a tablespoon of good quality tomato paste, a tablespoon of Indomex Sriracha and ½ teaspoon of smoked sweet paprika for a sweet and spicy smoky Asian fusion Gnocchi
