THAI GREEN CURRY RECIPE (serves 3-4)
INGREDIENTS
- 1-2 Tablespoons Indomex Thai Green Curry Spice Jar
- Olive Oil
- 500-800 grams Protein (Chicken fillet, de-shelled Prawns or Pork Fillet)
- 1 small brown onion, sliced
- 2 tablespoons Fish Sauce
- 2-4 dried lime leaves
- Coconut Powder (to make 1/2 cup coconut milk)
- 1-2 cups Chicken Stock
- 100 grams snow peas or green beans (trimmed and halved)
- 100 grams Baby Corn
- ½ cup chopped Coriander (save some for serving)
To Serve
- 1 cup Jasmine Rice (steamed)
- Pickled Cucumber, Tomato and Onion Sambal
- Chopped Coriander
METHOD
- Saute Onion in olive oil until translucent
- Add Chicken and fry gently until lightly browned and not cooked through
- Add Lime Leaves and Thai Green Curry Paste and sauté until fragrant
- Add Coconut Powder and stir in 125ml water to make a rich coconut milk
- Add in 1-2 cups of chicken stock and 2 table spoons fish sauce and stir gently to combine
- Add Baby Corn and Beans or Snow Peas and simmer until veges are cooked through but still firm
- Add chopped Coriander (keep a little aside to serve)
- Check seasoning and add extra fish sauce (or salt) to taste
- Top with chopped fresh chopped coriander and serve with Jasmine Rice and Sambals
- Enjoy
Traditionally served with lime wedges which add a yummy zing
