Indomex Thai Green Curry:

serves 3-4

Ingredients:

  • 1 onion, cut into petals
  • 1 red or yellow pepper, julienned
  • 3 – 4 baby marrow, thinly sliced on diagonal
  • 1 clove garlic, crushed
  • 1 tbsp palm sugar (or replace with brown sugar)
  • 500 grams deboned Chicken thighs
  • 1 – 2 tablespoons Indomex Thai Green Curry Paste
  • 4 dried lime leaves
  • ½ cup chicken stock
  • ½ cup coconut cream
  • 1 tablespoon Lime juice
  • 1 tablespoon Fish sauce
  • 1 tablespoon Indomex Peanut Oil
  • 1/2 cup chopped fresh coriander
  • 1 fresh green chilli, chopped (optional)
  • Jasmine rice, chopped coriander and lime wedges to serve

Method:

  1. Heat your wok and add Indomex peanut oil.
  2. Add dried lime leaves to release flavour, then add chicken and brown.
  3. Stir in 1-2 tbsp Indomex Thai green curry paste.
  4. Add garlic, onion, and vegetables. Cook for a few minutes until fragrant.
  5. Pour in ½ cup chicken stock and ½ cup coconut cream.
  6. Add lime juice, palm sugar, and fish sauce.
  7. Let it simmer for 8 minutes until rich and aromatic.
  8. check seasoning and add extra lime juice / fish sauce. sugar to taste
  9. Finish with chopped coriander, lime wedges and chopped chilli (optional)

Serve hot with jasmine rice and enjoy the perfect balance of creamy, spicy, sweet and zesty 🌶️🥥
